In February 2015 we moved brewery operations from the Restaurant (located at 108 S. Jefferson Ave) to our recently opened Brew Haus location just up the street at 302 S. Jefferson Ave. During this relocation, we also expanded brewery operations by installing a new 3BBL brewing system and a couple of new fermenters. We are now able to brew on both our 1BBL system and our 3BBL system which allows us to not only brew larger batches, but also allows us to brew two different beers in the same time that it used to take us to brew one 1bbl batch.
We only sell our beer at the Restaurant and the Brew Haus. We do not bottle or distribute at this time. We do, however, offer growlers for off-site consumption.
We pride ourselves on brewing unique and locally focused beers.
The Water of Ashe County and West Jefferson is some of the best around.
We work with local farmers to source some of the ingredients that we use and we also provide our spent grains to local farmers to feed their livestock.
We are often asked what our "flagship" beers are, you would be surprised at hard it is to answer that question because we are always trying out new recipes and tweaking existing ones. Below is a short list of some of our favorites thus far. We expect this list to continue to evolve and as we increase capacity over the next year we should be able to designate a couple of mainstays.
3Top-3Hop IPA - 7% - ABV
Named for Ashe County’s
own Three Top Mountain, this India Pale Ale was brewed using a combination of 3
different hops which were added at 3 different times. This blending of hops adds the right amount
of bitterness and aroma while still allowing the malt flavor to show through. We also dry hopped this batch 3 times which
results in a citrusy-floral finish.
JMB Stout - 10% ABV
Named after our owner’s
father, James Martin Brown, who passed away suddenly and unexpectedly the day
that the first batch of this rich Chocolate Stout was brewed. This Stout is
brewed with 6 varieties of malted barley that results in a silky smooth, yet
complex beer. This beer pours out with a
frothy tan head that would make Starbucks envious. It is loaded with chocolate and coffee aromas
and pleasing malty notes. It has a rich
mouth feel, is somewhat sweet and nicely balanced by the hops.
Claybank Kölsch - 5% - ABV
This refreshing German
style beer has a bright, straw-yellow hue, and a prominent but not
extreme hoppiness. This style of beer is often compared to a
German Pale Lager, although less bitter. This Kölsch is brewed
using Belgian Pilsner Malt, Vienna Malt and Crystal Malt which provides for a
lite beer with distinct malty notes. A
combination of Magnum, Amarillo, Saaz and Styrian Goldings hops were used to
provide a slight “bite” and floral aroma. Named for one of our
local Ashe County Roads that provides safe travel to several of our employees
and friends each day.
Deep Gap Dark IPA - 5.5% ABV
This Black IPA has a rich dark
color from our use of just the right amount of Blank Patent Malt and Roasted
used a generous amount of Simcoe, Cascade and Williamette hops to balance the
sweetness of the malt with the natural bitterness of the hops. After primary
fermentation we dry hop with fresh Citra leaf hops to add a nice aroma and
Third Knob Truth Serum - 9.9% ABV
This unique Belgian
Tripel style beer will have you sharing all of your secrets if you are not
careful. A large amount of Pilsen Malt
combined with a generous amount of Belgian Candi Sugar provides the base for
our Abbey style yeast to do its thing. Just the right amount of Hops are used to provide a slight bitterness
which is offset by the addition of Coriander seed and Orange peel, giving this
Boondocks Brew it’s unique flavor. Given the “High Gravity”
of this beer we felt it appropriate to reference Ashe County’s own Third Knob
Summit (elevation 3930 feet), about where you will be
if you have one too many.
Boondocks Bourbon Aged Stout - 5% - 7% - ABV
The base recipe for this creamy stout is our popular JMB Stout recipe with some minor modifications to lower the ABV a little. We also age this stout in barrels obtained from the Jack Daniels Distillery for at least 30 days. This aging mellows out this beer and gives it nice vanilla back notes with a hint of Whiskey and Oak.
Backwoods Campfire Scottish Ale - 5%-6% - ABV
A traditional Scottish Ale with a touch of Peak Smoked Malt is an ideal beer for the cold mountain nights by the fire. This quickly became a very popular and much requested beer and does not stay on tap for very long.

(October/November) - Roosevelt's Heartfelt Purple Saison - 5%- ABV
First Brewed in Collaboration with Granite Falls Brewing in October 2014 as a fund raiser for the March of Dimes. The base recipe for this Saison is our very own Orchard Creek Blueberry Saison recipe but with the help of the brewing team at Granite Falls Brewing we changed the flavor profile (and color) of this refreshing beer by adding Strawberries, Blackberries, and Raspberries to the mix. The best way to describe the taste of this beer is that "it tastes purple".
The Blind Truth - Belgian Style Tripel - 9%
This special beer is a collaboration with our good friends at Blind Squirrel Brewery located in Plumbtree, NC which is in Avery County. Our owner and Head Brewer, Gary Brown, has been friends with Will Young, Owner and Head Brewer of Blind Squirrel, since 2012 when both breweries opened. Having talked about a collaboration for a while, Will and Gary finally put their heads together and combined the best of their respective Belgian Tripel recipes and came up with the Blind Truth. First brewed in late 2014 and released in January 2015 at Beech Mountain's Annual Winterfest. This collaboration has become a popular addition to both the Boondocks Brewing lineup and Blind Squirrel's lineup and will be brewed on a regular basis when Will and Gary's schedules allows them to be at the same place at the same time to brew.
